Meta40 Plus is a lactid of tartaric acid, so a stabilizing polymer that, like all colloids, takes on an electrical load that is negative. This electronegative load increases with the increase of the esterification index. Meta 40 Plus behavior is therefore comparable to that of tannins.
In the case of white or rose wines, rich in protein substances, the addition of meta40 plus can produce a cloudy or opalescence effect (Tyndall effect), which disappear over time; To perform hydrolysis decreases the electronegative load of the colloid. For example, the treatment of champagne, weak in tannin and rich in colloidal proteins, is mainly performed with metattric acid with low esterification index (33-34%), precisely to avoid these disadvantages.

Conditions of use
Dissolve the meta40 plus dose in 4-5 parts cold water or come before adding it to the mass to be treated. To prevent wine turbidity, it is advisable to add the add of the meta40 plus before the final clarification and/or filtration. However, this involves a small percentage loss of Meta40 Plus.
