General features Essezym Color

These wine enzymes are obtained by submerged fermentation of Aspergillus niger and have a cumulation of individual enzymatic activities, such as polygalacturonase, pectinesterase and pectinliase. They also contain betaglucanase. They are devoid of preservatives and unwanted agents and secondary enzymatic activities, such as Cinamil Esteraza.

Essezym Color can be added directly over the grapes in the process of crushing or pressing, favoring the extraction

the substances in the shell, especially the aromatic precursors that better highlight the distinctive character of the variety of grapes.

Conditions of use

Essezym Color dissolves in 10 parts water or must and is added directly into the crush, in the press or in the tank at the beginning or during filling.

ESSEZYM Color acts between 8 ° C and 40 ° C. The higher the temperature, the more the efficiency of the enzyme, for example, at 25 ° C it is twice as efficient than at 15 ° C. The use of SO2 to a maximum of 500 mg /l, does not affect the enzymatic activity.

Composition enzymes for wine

Microgrananat of beige pectolytic enzymes. Minimum standardized pectolithic activity: 50 Pa.

ESSEZYM Color meets the recommendations of JECFA and OMSA FAO/WHO FCC, for the use of enzymes.

DOSE

  • 2-3 g / hl during skin fermentation at 18-24 ° C, for 2-4 days;
  • 1.5 to 3 g/hl in the termination phase at 45-50 ° C, for 1 - 2 hours;
  • 3-5 g / hl for young wines at 15-25 ° C, for 2-10 days.

Preliminary laboratory tests are recommended.

WARNINGS

Do not use bentonite or silicagel at the same time as the use of Essezym Color.

PACKING
