Description

Intended for the production of exceptional red wines: Cabernet, Merlot, Fetească Neagră, Shiraz. During the maceration of the grapes on the cob, use the enzyme ESSEZYM COLOR or ESSEZYM EXTRA COLOR.

Dose: 20 - 40 gr / hl. For diseased grape musts, increase the dose of yeast and nutrient.

Use: to rehydrate the yeast, add 100 gr of VINOFERM ROUGE to 1 liter of sweetened water 1 - 2 % (10 - 20 gr of sugar) at 35 - 40 degrees Celsius. Wait 15 minutes. Mix vigorously. Wait another 15 minutes. Mix again. Add gradually to the must container. To avoid thermal shock, the difference in temperature between the rehydrated yeast and the wort to which it is added must not be greater than 5-8 degrees Celsius.
