VINOFERM CRIO is indicated in the production of young wines. It is recommended for its remarkable ability to highlight thiol aromas: olive, passion fruit and grapefruit. It also produces a significant amount of esters at low temperatures, offering tropical fruit flavors and floral aromas.

VINOFERM CRIO is able to act at low temperatures. Very suitable for Chardonnay varieties and for rose wines.

Description

Dose: 20 - 40 g / hl. For diseased grape musts, increase the dose of yeast and nutrient.

Use: to rehydrate the yeast add 500 gr of VINOFERM® CRIO in 5 liters of sweetened water 1 - 2 % (50 - 100 gr of sugar) at 35 - 40 degrees Celsius, wait 15 minutes stir vigorously, wait another 15 minutes, mix from again, add to the bottom of the must container.

In order to avoid the thermal shock, the temperature difference between the rehydrated yeast and the must in which it is added must not be higher than 5 - 8 degrees Celsius. Once you have opened it, the package must be used within a few days. Store in a cool place. Professional oenological use.
