GENERAL CHARACTERISTICS POLYMER STABILIZER

Meta40 PLUS is a lactide of tartaric acid, so a stabilizing polymer which, like all colloids, takes over an electrical charge which in our case is negative. This electronegative charge increases with increasing esterification index. The behavior of Meta 40 PLUS is therefore comparable to that of tannins.

In the case of white or rose wines, rich in protein substances, the addition of Meta40 PLUS can produce a cloudy or opalescent wine effect (Tyndall effect), which disappears over time; to perform hydrolysis decreases the electronegative charge of the colloid. For example, the treatment of champagne, low in tannin and rich in colloidal proteins, is carried out mainly with metatartaric acid with a low esterification index (33-34%), precisely to avoid these disadvantages.

As the possible opalescence is accentuated at low temperatures, it may be useful to perform the following test: on a sample of wine to which Meta40 PLUS has been added; perform a laboratory filtration with the same permeability that will be used in filtering the wine. Bring the sample to 0 ° C and observe if, after 24 hours, a layer of colloid accumulates on top, if so, make a clarification with a small dose of bentonite. In addition, Meta40 PLUS reacts strongly in the presence of lysozyme, an enzyme extracted from egg white and used in the oenological field, mainly to counteract the effects of malolactic fermentation. For this reason, it is absolutely essential to remove all traces of lysozyme before taking Meta40 PLUS.

Meta40 PLUS is obtained under high vacuum, with the most modern manufacturing techniques. It has a creamy white consistency, neutral smell, sour taste and is easily soluble.

USAGE CONDITIONS

Dissolve the dose of Meta40 PLUS in 4-5 parts cold water or wine before adding it to the mass to be treated. To prevent turbidity of the wine, it is recommended to add Meta40 PLUS before final clarification and / or filtration. However, this implies a small percentage loss from Meta40 PLUS.

POLYMER STABILIZER DOSAGE

10 g / hl, as the maximum permitted limit. Preliminary laboratory tests are recommended.

COMPOSITION

Metatartaric acid ester with a value of 38-40 %.

PACKING

Packages of 1 kg and 25 kg.
