GENERAL CHARACTERISTICS ENZYMES FOR WINE

Essezym Clair is a wine enzyme obtained from the submerged fermentation of Aspergillus Niger and has a cluster of individual enzyme activities such as polygalacturonase, pectinesterase and pectinlyase. These activities provide rapid response and complete pectin degradation, thus improving clarification.

Essezym Clair is free of preservatives and unwanted secondary enzymatic activities such as cinnamylesterase and does not contain Genetically Modified Organisms.

Essezym Clair can be added directly to the grapes in the process of crushing or pressing as well as to the crushed apples before pressing, favoring the extraction of noble substances from the peel, especially the aromatic precursors that highlight the variety of grapes or apples used. Standardized pectolytic activity of at least 450 PA.

USAGE CONDITIONS
