GENERAL CHARACTERISTICS BENTONITE CLEANING
Activated clarifying bentonite that entails yeast particles and wine impurities that settle to the base of the vessel. The clarification operation takes between 24-48 hours.
After picking the grapes, the fresh wine makes its place in people's rooms. An increasingly common problem is wine clarification; Bentonite for wine clarification is an important step for the qualitative achievement of red, rose or white wine. The clarification process is also known as decantation and aims to remove sediments from wine and microorganisms. Bentonite is a sticky substance capable of absorbing proteins.
Many chemical and physical techniques and processes are used to stabilize and clarify the wine. Good results can be obtained by using bentonite. It will stay on the bentonite for 2-3 weeks then it will be pulled carefully so as not to disturb the deposit.
This operation is repeated several times, depending on the amount of wine to be treated.
ABOUT BENTONIZATION
Bentonite is the most efficient and recommended solution for clarifying and stabilizing wine and bentonite is a substance of natural origin that increases its volume and acts electrostatically, to attract and absorb particles suspended in cloudy wine and promote their deposition in the bottom of the vessel.
In an acid (wine) it acts on the electrokinetic absorption, because it combines with negatively and positively charged substances (must or wine proteins) which makes the bottles form a compact deposit.
Wine clarification is an important process that, of course, radically increases the quality of your final product. We recommend the use of this product on white, rosé and red wines to clarify and stabilize the protein, which must take place before the yeast is inoculated or during fermentation.
